The
vinification of the "Großes Gewächs" (Great Growth) follows the strict regulations
of the Bernkasteler-Ring classification. The grapes come only from the absolute
best parts of the steepest slopes and the yield is limited to 50hl per hectare.
The taste of the wines is on the dry
side. Before the wine is sold, it must pass a strict sensory test. The aroma of
the wine reminds of yellow ripe fruit and already provides an indication
of the full-bodiness and richness of taste. The minerality is soft but present
nevertheless and it makes the wine svelte and opulent at the same time.
